Introduction

What is Steam Heating Vacuum Frying?

Steam heating vacuum frying is a frying process below atmospheric pressure (~100kpa). At reduced pressure, the boiling point of oil and water is lower compared to atmospheric pressure. Palm oil as heat transfer medium and steam as the heating source to heat the oil indirectly, water will be evaporated from fruit and vegetable rapidly to achieve the purpose of drying.


Dure to a lower frying temperature, vacuum frying better preserves the nutritional value, aroma, and color of the fried product compared to atmospheric frying.


BAYI has developed the sixth-generation vacuum fryer successfully with multiple automatic functions. Electric heating vacuum fryer is made of vacuum chamber with de-oiling system, oil storage tank, oil circulation heating system, vacuum system, electric system, cooling supply system, pipelines and valves.
